Porfirio's Roasted Pork Loin Stuffed with Prosciutto,Provolone Cheese and Red Peppers

Ingredients

3 1/2 lb of trimmed Pork Loin
1 lb Roasted Rep Pepper
1/2 lb Parma Prosciutto
1/2 lb Sliced Grande Provolone
2 Tablespoons Fresh Rosemary
2 Tablespoons Garlic Powder
2 Tablespoons Basil
Salt and Pepper to task
1 oz of Olive Oil
 
Instructions
1.Trim Pork Loin
2.Butterfly Cut the Pork Loin
3.Cover with food wrap
4.Pound with a meat mallet from center out to the edges(achieve 1/4 inch thickness)
5.Season Inside
6.Layer Prosciutto evenly across Pork Loin
7.Layer Provolone evenly across Prosciutto
8.Layer Roasted Red Peppers across Provolone
9.Roll Jelly Role style and place seam side down
10.Tie with kitchen twine
11.Cover with Olive Oil and remaining seasonings
12. Place on Baking Sheet in preheated over for 1 hour and 20 minutes
13.Remove from oven
14.Cover with aluminium foil for 30 minutes
15.Remove Kitchen Twine
16.Cut in 1 1/2 inch sections
