Jester's Chicken Crosswicks
1/4 cup all-purpose flour for coating
· 1/2 teaspoon salt
· 1/4 teaspoon ground black pepper
· 1 skinless, boneless chicken breast halves - pounded 1/4 inch thick
· 1 tablespoons olive oil
· 1 tablespoons butter
· 1/2 cup of fresh mozzarella
· 1 cup wilted spinach
· 1/2 cup white wine
· 1/4 cup chicken stock
· 1/4cup roasted red peppers
· 1tsp lemon juice
To prepare
first get your ingredients ready
pound the chicken breast ¼ inch thick
layer the spinach, roasted red pepper and fresh mozzarella
then sprinkle the seasoning
now roll the breast tight and secure.
bake the stuffed breast at a 450degree for 20 minutes
while that is baking you can prepare the sauce
in a skillet pan sautee the shallot with oil till golden then add wine
add chicken stock and lemon roux and season it. let it simmer to thicken the sauce
make sure the breast is cooked to be sliced in pin wheels
once the sauce is ready, fan out the chicken breast on to a plate and top it with the sauce
This dish is very light and flavorful and it can be ordered with starches and vegetables.
