Calimari alla Toscano (Two person portion) 
 
Clean and cut calamari 1 inch width 
6 oz. extra virgin olive oil 
3 oz minced garlic 
4 oz black Kalamatas olives 
2 oz. Baby green capers 
Pinch of red pepper flakes 
Pinch of ground pepper or black pepper 
2 Large ladles of Plum Tomato Sauce ( San Marzano) 
No salt 
Chopped Parsley 
5 oz Table red wine 
 
Heat pan and add extra virgin olive till sizzle. 
Start adding garlic, olives, capers, spices, to a medium crisp 
Place the calamari in the pan and saut for 4 minutes. 
Add 5 oz of table red wine until reduced 
Two large ladles of Plum tomato and cook until done at 375 degrees for >ten minutes until done. Capers and olive are salted, do not add extras salt
